Click to Tweet! http://clicktotweet.com/81Nt8 Follow my food blog: http://cookingwithcox.tumblr.com/ Ingredients: 125g butter 175g unrefined soft brown sugar, eg, light muscovado 2 eggs 280g plain flour 1tsp bicarbonate of soda Pinch of salt 125ml milk 3 medium, ripe bananas, mashed 1/2 cup Nutella 1tsp vanilla extract Instructions: -Grease a 25cm x 11cm (10in x 4½in) loaf tin. -Preheat oven to 180C -Beat together butter and sugars until smooth -Beat in the eggs, one at a time. -Sift in half the flour, the salt and bicarbonate of soda. Mix well. -Mix in the milk, followed by the rest of the flour -Mash the bananas and fold them into the mixture with the vanilla extract. -Heat the Nutella in the microwave for 15-20 seconds until runny. -Add half of the batter into the Nutella. -Add the batter in layers to the tin. -Swirl briefly with a knife -Bake for about an hour or until a skewer inserted into the centre comes out clean (although this is quite nice a bit "under-cooked") -Leave to cool in the tin for 20 minutes before turning out. |
