Check out Jamie's channel to see us make a Valentine's Day recipe! http://youtu.be/ipbpumdYhQ8 Smexy Salad Recipe (yeah you read it right) 1 white chicory/endive 1 red chicory/ endive A small handful seedless red grapes 1 black fig Few sprigs fresh mint Few sprigs purple basil Small handful rocket 1/2 lemon 1/2 clementine Extra virgin olive oil Sea salt and freshly ground black pepper 1/2 ball buffalo mozzarella 1 piece Parma ham or prosciutto 1 small piece parmesan cheese (will shave a tiny bit off per portion) Trim the base from the chicory and break off the outer leaves and discard. Break off 4 innerleaves from each colour chicory and place in a large bowl. Halve the grapes and place in a separate bowl. Trim the top off the fig and slice in half. Pick the mint and purple basil leaves and place to one side. Add the rocket to the chicory. Take a clean jam jar with a lid. Squeeze the juice from the clementine and lemon through your fingers to catch the seeds and drip the juice into the jar. Top up with 3 times the amount of extra virgin olive oil. Season with a little salt and pepper. Secure the lid on the jam jar and shake well. You won't use all of this dressing but it will keep for a week in the fridge. Tear the mozzarella in half place on a serving plate. Add the fruit to the bowl of leaves. Pour 1 tablespoon of the dressing over the salad and toss gently to coat. Pick up a cluster of leaves and wrap in prosciutto. Place the wrap on top of the mozzarella. Use a knife or speedpeeler to carefully scrape a curl of parmesan cheese and place on top of the salad.
