Hola! Buenos días - I am back with a new recipe; a hot and smoky Chile Con Carne!


Ingredients:
500g Minced beef
2 Medium onions (chopped)
1 or 2 Cloves garlic (chopped)
1 Scotch Bonnet chilli (chopped)
4-6 Chipotle en Adobo (chopped - with some sauce included)
1 Guajillo chilli (rehydrated and the flesh removed)
1 Tin chopped tomatoes
1 Tin kidney beans or black beans
1 Small tin sweetcorn
1 tsp Smoked Paprika
1 tsp Oregano
1/2 tsp Cumin
1 pinch Ground ginger
1 pinch Cinnamon

Directions:
-Fry onion, garlic and scotch bonnet on a medium heat until soft (about 5 minutes)
-Turn heat to high, add the mince and brown. Breaking the block up occasionally (don't prod it too much or it'll release too much liquid)
-Add spices and stir.
-Add Tomatoes, chipotles, the flesh from the Guajillo chilli and the oregano.
-Bring to the boil, cover and simmer for 80-90 minutes or until the meat is tender (stirring occasionally and adding extra water [use the water from rehydrating the chilli for extra flavour!'> if it gets too dry)
-Add the beans and sweetcorn and simmer for another 15 minutes.

-Serve with rice for Chile Con Carne or have it on nachos, in a burrito, with custard or from your partner's crevices; whatever takes your fancy!

P.S remember that chipotle tequila? Well... Chop up some fresh coriander, add the juice of half a lime, some olive oil and a splash of the tequila, give it a good mix/whisk/shake and it makes an amazing salad dressing.
